Maple Coconut Sugar Oat Pancakes
A Recipe by Feasting On Fruit
Ingredients:
- 1 1/2 cups Wildway Maple Coconut Sugar Planet Friendly Oats
- 1/3 cup milk of choice
- 1/2 cup mashed banana, pumpkin puree, or yogurt
- 2 tbsp molasses
- 2 eggs
- 1/2 tsp vanilla extract
- 1 tsp ginger
- 1 tsp cinnamon
- 1/4 tsp allspice
- 1/4 tsp cloves
- 1/8 tsp nutmeg
- 1 tsp baking powder
- Pinch of salt
- 1 tbsp coconut oil (for cooking)
Instructions:
- Warm a griddle or pan over medium low heat. Add the coconut oil, and evenly grease the pan.
- Blend all the ingredients until combined and smooth (put the liquid ingredients in the blender first for easier blending).
- Pour batter into the preheated pan (about ¼ cup per pancake) and cook for 2-3 minutes on the first side over low heat. When you can easily slide a spatula underneath, flip and cook another 2-3 minutes on the second side.
- Repeat until all the batter is used up (makes approximately 6-8 pancakes).
- Serve with coconut yogurt, Wildway Gingerbread Granola, fresh fruit, maple syrup, etc.
