Chocolate Coconut Cashew Ice Cream Cups

Base Ingredients:

1 tbsp coconut oil

Ice Cream Ingredients:
1 cup coconut milk 
2 tbsp nut butter
2 tbsp maple syrup
1 1/2 tbsp cacao powder
1 tsp melted coconut oil
5 pitted dates

Pinch of Himalayan pink salt

Directions:
  1. Add the base ingredients to food processor
  2. Press into cupcake liners and freeze
  3. Add all ice cream ingredients to food processor and blend
  4. Once it reaches a creamy consistency, pour over the granola cups
  5. Freeze for 4+ hours
  6. Try not to eat them all at once!
