Gluten-Free Summer Berry Crumbles

At Wildway we're embracing the end-of-summer vibes with a recipe that celebrates Summer Seasonal Produce and our Wildway Coconut Cashew Granola. Celebrating all things summer as we begin to prepare for fall.
Ingredients:
- 3 cups (420g) of fresh or frozen/defrosted berries (raspberries, blueberries, or any kind of your choice)
- 1/4 cup (40g) coconut sugar (you can also use your preferred sweetener)
- 1 tablespoon tapioca starch
- 1 tsp lemon juice
- 2 cups (240g) Wildway Coconut Cashew Granola
- 1/4 cup (50g) coconut oil, melted
- 1/2 tsp cinnamon and/or ginger
Instructions:
1. Preheat and Prepare:
Preheat your oven to 350°F (175°C).
2. Prepare the Granola Crust:
Begin by pulsing the Wildway Coconut Cashew Granola in a blender or food processor until it reaches a delightful mix of chunky crumbs. This forms the base of our berry crumbles.
3. Mix the Crumble Topping:
In a medium-sized bowl, combine the granola crumbs with the melted coconut oil and the aromatic spices - cinnamon and/or ginger. Gently toss until the mixture is thoroughly coated and the spices are evenly distributed.
4. Create the Crust:
Take 4 ramekins and place a few spoonfuls of the granola crumble mixture in the bottom of each. Press down firmly using a glass or the bottom of a measuring cup to create a compact crust. This crust provides a satisfying crunch to contrast the juicy berry filling.
5. Bake the Crust:
Place the ramekins with the crusts in the preheated oven and bake for about 10 minutes. Once baked, set them aside to cool while you work on the berry filling.
6. Prepare the Berry Filling:
In another bowl, gently stir together the berries, coconut sugar, tapioca starch, and zesty lemon juice. The combination of flavors and textures will create a luscious berry filling that's both sweet and tangy.
7. Assemble and Top:
Spoon the berry mixture evenly over the baked granola crusts in the ramekins. Make sure to distribute the berry goodness across all the ramekins.
8. Add the Finishing Touch:
Sprinkle the remaining granola crumble mixture over the berry filling, creating a beautifully textured top layer.
9. Bake to Perfection:
Return the ramekins to the oven and bake for an additional 20 minutes. Watch for the telltale signs of bubbling berry juices and a slightly golden-brown crumble topping.
10. Cool and Enjoy:
Once the berry crumbles are out of the oven, allow them to cool briefly. This warmth combined with the coolness of ice cream or yogurt makes for a delectable dessert pairing.
