Simple Blueberry Pancakes
1 ¼ cups fresh organic blueberries
2 large eggs
½ TBS water
¼ lemon, juiced
½ tsp arrowroot or tapioca flour (optional)
In a medium size bowl, combine Wildway Original Grain-free Hot Cereal, eggs, water, and ¼ cup fresh blueberries.
In a small sauce pan, add the remainder of the blueberries and the lemon juice. Bring to a simmer then turn to low and cook for 5-10 more minutes.
Add arrowroot or tapioca flour to the blueberry sauce to thicken, if desired.
Spoon pancake batter on to a hot griddle and cook until edges start to firm, flip and cook an additional 1-2 minutes.
Top with blueberry sauce and enjoy!
